Sometime you crave something a little orange...
Hello & Welcome! Today I'm sharing my Orange Tuna Ceviche.
Ceviche is a cooking process in which an acid (lemon or lime) is used to cook meat (usually a seafood). This takes time since the meat must be left to sit to cook. Me being me...I'm always pressed for time during the week. Coming home late and cooking for the family usually makes this process less than appealing when you have two kids and a husband dying of hunger. What's a girl to do???
Well I'm a cheat. I used canned tuna for this. I know...I know...why not use fresh fish? Well, we can't always get everything fresh and make everything from scratch. This is a simple dish so it will be fresh and filling, yet tasty.
Ready to serve in 15 minutes start to finish.
We are down to the last leg of the dish. Adding in the spices. First add the oregano. Place the oregano in the palm of your hand and crush it with your thumb. It will easily crumble. Sprinkle in the cumin. Finally add salt and pepper to taste. Mix it all well and break up any large chunks of tuna.
Ready to serve!
Drain the mixture with your spoon as you serve over a tostada. Top with Valentina hot sauce (or any hot sauce of your liking) and garnish with a few leaves of parsley.
