Need an iron boost?
I have long since have had issues with having low iron and am constantly having to eat iron rich foods. This is one of the ways I add some more iron to my diet. So when I first married my husband he taught me how to make a Persian dish called Esfanaj Borani. This is something similar to artichoke dip but not as fattening since it does not have a cream and cheese base, but a yogurt one. Yogurt is a large part of the Persian diet as many foods are made with it. I tend to use it in place of mayo at times too. In reality you are getting iron from both the spinach and the yogurt. Double Whammy!
This can be used as a dip or a side dish. Sometimes I eat it as a main dish (Shhh!) And the best part is that it's so easy to make!
Here is what you will need:
We will start with preparation. Simply slice up the onion into long pieces and then cut into fourths. I don't like just leaving them as long pieces, because when i'm eating I don't want to have a long piece of onion hanging off of my spoon. Next you will rough chop the spinach so that you again do not have long pieces.
Please note that I have added a few spices to my dish that normally are no present in traditional Borani, my husband actually likes mine better.
